Will having more ads help the performance of the campaign?
Currently we are running ads with one of two specific concepts
Would having more creatives help the campaign in terms of conversions
1) Having more display and text creatives/ads only in these two concepts
2) Having more display and text creatives/ads in creating new concepts
Would it be risky to have more creatives (display + text) instead of just talking about one or two points

Having more creatives would certainly help the campaign in terms of performance. However, having creatives related to same concept or a different one, depends on the targeting criteria and your campaign structure. For a search campaign, if you have created one ad group per product/service (which is a best practice) creating ads related to those products/services would be the right thing to do. Same goes for display as well. Just ensure ad content, landing page and targeting criteria are aligned in every ad group.

Like Sumanth said, adding more creatives could help you to receive more conversions. This is especially true if you weren't using all of the available sizes for the device(s) you are targeting because it will help you to get more impressions. Adding in new creatives of the same size that you already have likely won't generate more impressions but it will allow you to see which messages with best, which should help you to improve CTR.
Like Sumanth said, you should consider the messaging your customers would be interested in. In fact, I would suggest putting together personas for the audience that you are targeting. You may even want to restructure or create new campaigns to specifically targeted toward a certain demographic with ads that speak directly to them.
