Google forwarding number - can I swap out words?
Currently working on a client website to implement Google's Call Forwarding number for more call conversion data in adwords.
The only issue is that the phone number includes an extension, so I am not sure if the swapping code will work:

Is the code only able to swap out normally formatted numbers? Or will the code I posted above also work?

Welcome to the group.
Both values are strings, so it should work. The script appears to take whatever is in the second argument, when the page visit wasn't preceded by an AdWords click.
Click to call a number with an extension like this might not work. That I do not know. This would be for devices that haven't previously clicked on your ad to call. What should happen with most phones is the number itself will be displayed as a click-to-call link. If you format the link yourself, only include the phone number in the link:
<a href="tel:+1-800-123-4567">+1-800-123-4567 ext. XXX</a>
