Availability date attribute

We custom manufacture our products and many of these are engraved. I understand there is a new availability date attribute. Is it mandatory to use this attribute? Our availability date depends upon day of week ordered, number of items ordered and amount of engraving for each. It is our understanding that these engraved items which were previously listed as 'available for order' now have to be listed 'in stock' as a mandatory attribute. If the 'availability date' attribute has to be used, we really can't give one until the order is received which we now do by email. How do we handle this?

the availability_date attribute is not required --

https://support.google.com/merchants/answer/188494#availability

availability information (and all submitted feed-data) should be based on

one, single, item-offer only; one line per offer -- only a single product per

item-offer is allowed to be submitted (considered as an order) unless the

item-offer is a specific, predefined, bundle.

availability_date is strongly recommended for preorder items --

for example, a video-game with a scheduled release date.
