No Events in Behavior Reports

We are attempting to use GA to track anonymous open events for our E-Bill emails. This was enabled with this image tag url at the bottom of the emails:

We enabled it on Feb 3rd, 2016 and got data as expected in the Behavior->Events reports for the 3rd and 4th then nothing since, today is March 9th. We can see in the Real-Time Reports right now that it is working there as we have ~100-500 events every 30 minutes.

Oddly the Behavior reports also have this in a yellow highlight: "This report has been filtered to include only data where there are values for "Event Category" dimension." which makes me think that there is something wrong with the way we set the category ec=email in the image url? Though the category works fine in Real-Time.

Are we missing something here? Are the url parameters correct?

But it does not answer the question why these hits are not showing up in Behavior? I see a lot of posts about Behavior->Events not showing up... is there a bug in GA or something being misunderstood?

Any help appreciated.
