We created a custom dimension value to track how many times our users get zero results if they look for a car on our website. (We list cars for rent.) 

I checked in Analytics (behaviour-->site content--->all pages) how many times somebody looks for a car. As you can see we have 975 pageviews (about 700 unique) in a month on our search site.  So I presuppose that about 700 users saw our "list page" (where we list our cars)    ( Link

My question, how is it possible?

We're experiencing the same bug.  See your graph there in image #2?  You have thousands of sessions total, but in your table Google is accidentally leaving out the ones which are "(not set)" and showing a completely inaccurate total.
