Channel Description for Organic Search in MCF and Default Channel Grouping

In both Default Channel Grouping and MCF Channel Grouping help documents:

The description for how traffic is grouped into the Organic Search channel explain that it is a case of medium=organic.

 

My question is: If it's an organic search result then there won't be an utm parameters in the link, so therefore does the tag send this across? I don't see that being set in the network traffic of the tag's requests.

Therefore, is it in fact similar to Social, where the referrer is recognized against a list of known search engines?
