Filter New user data per month instead of rolling 2 years?

Is there a way to filter the new user data per month, instead of a rolling period. If it says I have 200,000 unique visitors, it also shows 88,000 new users month over month. I am hoping to break that down to a more accurate number per month.

I'm not sure if I understand your question because it seems you've answered it.

Many reports already have new users exposed e.g. Acquisition>>All Traffic>>Source/Medium

You can also just apply the "new users" segment.
