You need to put your Google Analytics tracking snippet just before closing </head> tag on all pages that you want to track.

There are over 1200 pages on our website – so you mean it would have to be pasted on every one of these pages?

This is how Google Analytics works. It needs to be loaded on all pages when the page is loaded. This is why you need to add it on every page.
