Adding Universal Analytics code to Emails?

This article I ran across seems to suggest you can add Google Analytics code to an email (I assume web based) as an image.

Is this what the article is saying? If so, what are the benefits on top of regular UTM tracking.

Yes, it's about the adding the tracing pixels to track the i.e. emails opens. It's helpful for analysing the for instance Open rates, if you want to use one tool (GA) to measure the email performance instead external tools.
Keep in mind that there are some emails platforms or tool the will disable to fire the pixel, and you will not be able to see the opens - same as it is in other email platforms.
