Anyone have any recommendations for setting up GA to effectively track subscriptions for an online education platform?

You can set up event tracking for tracking subscriptions. Send an event to Google Analytics when a subscription happens, please check the document below about event tracking:

https://developers.google.com/analytics/devguides/collection/analyticsjs/events

You can try with a "Thank you page (For the subscriptions)" and create a goal in GA.
