We have 187 locations and our hours of operation keep changing on google results.  Some locations we make edits and they stick, yet others the hours change.    Any thoughts?

This is because Google is making suggestions and changes to your data based on what it's seeing across other sources. A VERY common issue and one that can have a dramatic affect on foot-traffic.

Best practices to stay on top of things:

1) Consistency. Make sure what your website store finder and local restaurant web pages and other network listings (Yelp, Trip Advisor, YP etc.) all say the same thing as what you're feeding to Google. To compliment, you should feed your location data to aggregators which Google treats as secondary data sources.

2) Recency - you need to tell GMB you're actively managing your presence. Regularly clearing out suggestions and updating your listings as they do move / open / close / change hours will over time lead the algo to trust your direct GMB feed more

Note: even by doing both of the above at a high standard, you can expect some smaller amount of suggestions to still be made.

Given the number of locations you're taking care of, make sure you're operating inside the GMB Locations platform and leveraging as much of the bulk functionality as possible.

Finally, there is a few 3rd party platforms out there that not only manage the data and feeds on your behalf but also provide rolled up listing accuracy, ranking, traffic reporting as well as Google review management.

Hope this is helpful! If you have additional questions, feel free!
