If I set different destination URLs for every keyword in my ad group, does that override whatever URL I put in my ad?

Yes, you are correct. The Keyword level URLs that are present in the account will indeed override the Ad URLs.

A quick addition to Nick's answer;

Please note that, if you use destination URL for a given keyword, the same rule still applies: destination URL must match display URL.
