How to calculate goal value?
On our website we have various conversion goals:
1. Book a demo
2. Request a call back
3. Contact Enquiry
Each would have equal weight in terms importance and potential revenue.

Goal value is just what it says--it is the value of the goal to your company.
In your example, the value of a goal is not the same as the value of a sale. That is because your goals are around generating sales leads--these are three types of lead generations. So, you need to figure out value of each of these lead types to your bottom line--to your actual sales.
If, for instance, someone who books a demo has a high chance of going ahead and making a purchase, then the "value" of that "goal" is high.
If someone who just does a contact enquiry might purchase, but does not most of the time, then the "value" of that "goal" is low.
Your example shows three lead types ("goals"), any or all of which might lead to a sale. If you have any data to analyze, you should be able to see what percentage of your total sales each of these "goals"produces. That will help you decide which "goal" is more valuable to you. That's how you decide what your "goal value" is.
