Unfortunately Google does not verify listing via email, however, there are alternatives for businesses that doesn't receive mail. The first step is to go ahead and trigger the verification postcard to be sent in the Google My Business dashboard. After two weeks you'll be able to contact Google support to get the listing verified. To contact Google support from your Google My Business account click on the three horizontal lines in the top left corner, then select Support. In the menu that appears there will be options to "Contact Us".
Explain the circumstances to the Google representative and they will help you with the verification.
Google support is unfortunately limited these days but there are several channels to go through in addition to the above:
