Google's thinking on categories is that categories should complete the statement: "This business IS ....." not what "this business does..."

Thus they are not going to have categories for what you do but what you are (an accountant?)

It determines what you do from the rest of the web. It looks at
-Content and links on your home page (not necessarily the menus but the main content) to see the main things you say you do
-Categories at other prominent Local directory sites that do include services
-Review content at Google and other prominent local sites
-Links to your website indicating within the link or near it what you do
-Articles written about your business from around the web like newspaper articles highlighting those things you do.

there is no option to get customized categories added.
You have to make your choice from Googles default list - slecting the closted one.

You also can try use your "customized categories" as part of the description and on oyur website (if there is any for the G+ page in question)

In that case I reommend using scheme.org to give Google good  signals about such categories.
