I ran a report on July 31  for (july 1 -31) in adwords and it showed 60 conversions... I ran the same report (july 1 - 31) today August 5 and it shows 86 conversions....

Any idea why there is a drastic change in conversion data?

The AdWords cookie lasts for 30 days. Conversion data can change up to 30 days after the fact.

If a visitor landed on your site on July 31st, the conversion may not show until late August if they converted at a later time.
