We are a charity that has its own Wordpress site, however our donation page is hosted on a different website. It's a common site charities use to set up a page to accept donations. Since that is not our official website, can we still direct users to the donation page off our site if they click our ad?

No, you would need to send them to your website landing page that you would then optimize to push your action of making a donation. You would want to talk a little about your non-profit charity... the who, what, where, and why... and then have a action bar or button asking for a donation. All of your ads need to go to your website. 


Keep in mind that links to some third party sites can create issues with AdWords. You generally need to bring people from your ad to your website and not have any actions that push them elsewhere. If the third party site is clean, safe, and not pushing ads on it... you would possibly be fine. AdWords always works best when your action is promoting your website for the purpose of staying on it and completing a form, buy something, learn something, etc..
